Eggsellent Brekkie (or lunch) Fuel
I've been obsessed lately with hearty scrambled eggs for either my brekkie or lunch. I've finally found a combo that keeps me full for a few hours! (bye bye 10:30 am hanger!) The recipe below will provide your body with protein, carbs, and good fats to keep you fueled and running!
- a splash of heavy whipping cream
-a small handful of shredded cheddar
-2 handfuls of chopped bell pepper
-1 tablespoon of unrefined coconut oil
-2 handfuls of spinach
In a small bowl, whisk together the eggs, cream, and cheddar.
In a small pan heat up the coconut oil, adding in the peppers and spinach. Saute for 3-5 minutes (until the spinach is dark green)
Pour in the egg/cream/cheese mixture and keep stirring with a spatula. And, VOILA! You'll have super fluffy, nutritious eggs!
If you pack your lunch, you could totally make and take to reheat in the microwave!
